Potato-sauerkraut-soup

This recipe is so simple that I don't even have a real recipe for it.
You'll need:

about 1 kg of potatoes
1 leek stem
onion
oil
vegetable broth
salt & pepper
soy cream
sauerkraut

Heat oil in a saucepan, add onion cubes and potato cubes as well as leek rings, then add as much vegetable broth as needed to cover vegetables, cook for about 20 minutes, then  puree with some soy cream. Heat the sauerkraut in another pan and top soup with it.
